Memorial Day Meal Makeover & Sams Club Membership Deal $1/Week

According to a poll done by the HPBA (Healthy Patio & Barbeque Association) 70% of Americans think cooking out is better than eating out, and with Memorial Day around the corner, people are gearing up for barbecues, beach days, pool parties and picnics .  To help keep each summer soiree fresh and fun, Sam’s Club has partnered with author and entertaining expert Colleen Mullaney to offer tasty twists to warm weather outings.

Memorial Day Meal Makeover: Incorporating unexpected ingredients into recipes can turn a picnic staple into a mouthwatering surprise. The two recipes below, developed exclusively for Sam’s Club, easily refresh familiar fare.

Products such as the Sam’s Club Members Mark Mozzarella Garlic Chicken Sausage, Heinz Picnic Pack and Simply Lemonade with Raspberry are other simple solutions that leave a lasting impression.  And Colleen Mullaney has incorporated these items and more into four picnic baskets for each summer celebration: Pool Parties, Beach Outings, Backyard Barbecues and Parade Picnics. Here are a few recipes you can use for your summer celebration:

Chocolate Grill Fondue

  • Frozen Belgium Mini Crème Puffs
  • 1 quart fresh strawberries
  • 2 cups Ghirardelli chocolate chips
  • Wooden skewers

Rinse strawberries and cut tops off. Place in bowl. Take crème puffs from freezer and put out on a serving platter with skewers and strawberries. In a grill proof pan, put chocolate chips, stirring constantly until melted.

To serve have guests skewer a crème puff or strawberry, dip in chocolate, and enjoy.

Lemonade Mocktail

Serves 8

  • 2 qt.  Simply Lemonade
  • 16 oz. ginger ale
  • 1 cup frozen strawberries in syrup
  • 3 cups ice

In a pitcher or drinks dispenser, mix all ingredients. Chill until ready to serve. Pour into ice filled glasses.

Pinwheel Sandwiches with Spicy Mayo

Sandwich Ingredients:

  • Oscar Mayer Turkey Sub Kit
  • Mission wraps in sundries tomato basil and garden herb


Spicy Mayo

  • 1 cup mayonnaise
  • ¼ cup horseradish
  • 2 tbsp. Dijon mustard

In a bowl whisk together mayo, horseradish and Dijon.

Chocolate covered Pretzels—Star Spangled Sticks

  • 2 cups chocolate chips
  • 24 pretzel rods
  • Decorative sprinkles
  • Wax paper

In a microwave safe bowl melt 2 cups of Ghirardelli chocolate chips at 20 second intervals, mixing with a rubber spatula until just melted.

Continue stirring until smooth. Let sit for a minute to thicken a bit, as it will coat more evenly. Dip pretzel rod in chocolate and then coat with sprinkles. Place on wax paper to set. Continue  until chocolate is used up.

Serve in an upright container such as a brightly colored bucket for easy grabbing. Wrap in wax paper for easy transport in your picnic basket.

Millionaire’s Shortbread

  • 3 cups prepared sugar cookie dough
  • 8 caramel milk way bars
  • 1 cup coconut flakes

Butter and flour a 9×13-inch pan. Preheat oven to 350 degrees Spread the dough evenly on the bottom of the pan. Put in oven and bake for 12 minutes, or until the edges start turning light brown. Remove from oven.

While bottom crust is baking, in a microwave safe bowl, break apart milky way bars and place in bowl. In 20 second increments, melt bars, stirring with a rubber spatula. When bars and melted enough to a spreading consistency, Gently spread evenly on top of warm crust. Sprinkle coconut on top of chocolate caramel layer and let cool to room temperature before cutting into squares.
