When I find out we are having last minute guests I always have a mini freak out session and then I get my act together and get into party planning mode. Last minute dinner guests can be overwhelming and stressful but not if you follow these simple steps!
1. Keep make-ahead meals stocked in the freezer
Lasagna is a house favorite of mine so we always make a few batches ahead of time and store them in the freezer so when needed we can easily pull these out and fix them. There is also a nifty trick I learned about lasagna.. you can use uncooked noodles in your recipe, just add a 1/2 cup of water to your sauce mixture before you bake it. That cuts down time and makes lasagna simple. Pasta is something that’s always quick and easy for entertaining.
2. Keep a snack stash around
Keeping crackers, dip mixes, cheese, etc on hand can make for tasty and extremely easy appetizers. One my favorites to serve is our famous cheese ball.
It’s super easy and quick. You can even do something simple with dip and crackers. Simply add cheese and an olive to Ritz crackers for a tasty snack.
3. Speed clean
In our house we call it the 5 minute pick up game where everyone gets involved to pick up and clean the rooms we will be entertaining in. Having everyone join in makes the cleaning go quicker and with everyone helping out it’s less stress on the hostess. Also, we have 4 year old twins so making it a game for them with a prize at the end certainly helps.
4. Spruce up the table
Look around the house to see what you have on hand.. have some flowers or candles? Make a simple but eloquent table setting by finding little things to spruce it up. You don’t need much.. just make it look pretty.
