I Can’t Believe It’s Not Butter!

I Can’t Believe It’s Not Butter!® recently introduced two delicious new products – Whipped & Creamy Taste and Spray Made with Extra Virgin Olive Oil. Sounds yummy right! We were actually lucky enough to receive samples of each so that we could taste test these new items.

I Can’t Believe It’s Not Butter!® Spray Made with Extra Virgin Olive Oil is great for roasting chicken and vegetables. It’s the only spray made with extra virgin olive oil – 0 calories, 0g fat and 0g trans fat per serving.. yes, I said 0! Last night we went with a roasted garlic chicken for dinner and we used the I Can’t Believe It’s Not Butter!® Spray. This was by far one of the best roasted chickens we’ve made so far. The extra virgin olive oil definitely gives the taste a bit more than regular butter. Usually we don’t finish a whole chicken but this one was gone! The kids had seconds even so this is definitely the way for us to go.

I Can’t Believe It’s Not Butter!® Whipped and creamy taste has 78% less saturated fat and 50% fewer calories than butter per serving. If you like the fresh butter taste this is the one for you. I myself don’t prefer it but my husband does. I’m just not a fan of the whipped butter, don’t ask me why because I can’t explain it.. it just has a different taste to me that I don’t prefer. My husband on the other had enjoyed the whipped and creamy taste so he gave it a thumbs up.

I was looking through the I Can’t Believe It’s Not Butter!® recipes to see which ones I could find so that we could try out a new delicious recipe along with these new products.. but in my searching I came across the recipe below and couldn’t resist! After a family taste test on this dessert it passed with flying colors and has been requested again!

Berry Delite Bread Pudding

1-1/2 cups cholesterol free egg substitute
1-1/4 cups skim milk
2 tsp. vanilla extract
1 tsp. finely grated lemon peel
1/4 cup I Can’t Believe It’s Not Butter!® Spread
1/4 cup firmly packed light brown sugar
1 prepared angel food cake, cut into cubes (about 12 oz.)
3 cups fresh blueberries, raspberries, blackberries and/or sliced strawberries

Instructions

Preheat oven to 350°. Grease 11 x 7-inch baking dish; set aside.

Beat egg substitute, milk, vanilla and lemon peel in medium bowl, with wire whisk.

Microwave I Can’t Believe It’s Not Butter!® Spread with sugar in glass measuring cup at HIGH 30 seconds; stir until sugar is dissolved. Slowly whisk into egg mixture.

Arrange cake and berries in prepared dish. Pour egg mixture over cake, pressing cake down to coat. Cover with aluminum foil and bake 30 minutes. Remove cover and bake an additional 15 minutes or until knife inserted in center comes out clean. Serve warm and, if desired, with nonfat dairy whipped topping.
