Country Crock has always been a staple in our house so when we were invited to join the Country Crock Casserole Club we had to say yes. This club is full of giveaways and recipe sharing! For three months we receive a club package with different recipe ingredients and then we get to be crafty and create three different casseroles using the ingredients in the kit.
This first kit included 1 can of bread crumbs, 1 box of noodles, 1 recipe card, 1 coupon for Country Crock and a $25 Gift Card to get any other ingredients we needed.
The recipe I went with was a spin on the Easy Mac & Cheese recipe they sent with the kit, Chicken Noodle Casserole. I apologize for the picture quality, we were trying out pictures on our tablets, but they don’t seem to be very good quality!
Chicken Noodle Casserole
4-5 Boneless Chicken Breast Halves, cubed
1 box Rotini pasta (you can also use egg noodles)
1 can Cream of Mushroom Soup
1 can Cream of Chicken Soup
Dash of Salt
Dash of Pepper
1 c Sour Cream
For the topping, I use 1-2 cups of crushed Ritz Crackers and about 1/2 cup of melted butter.
Cook chicken in a skillet until done. Boil pasta until tender. In a bowl, mix together all ingredients and place in a casserole or baking dish. For the topping, mix the melted butter and crushed Ritz crackers and then sprinkle it on top of the casserole. Bake at 350 degrees for about 30-40 minutes.
*Tip* I like to season my chicken while its cooking with salt, pepper, garlic, etc. This is also a great starting recipe so sometimes I will add some cooked veggies or onions to it as well. You can get creative and add just about anything!
