A delicious Brown Sugar Meatloaf recipe… Our family has never been huge meatloaf fans but once in a while we try a new meatloaf recipe. Well, we did try a new meatloaf recipe once in a while.
After this recipe was created we haven’t tried a new meatloaf. This Brown Sugar Meatloaf is now in our regular meal rotation and both the kids and husband can’t get enough of it.
Bare with me here as I was trying to show my husband how easy this recipe was so he’s actually making it while I’m instructing!

Combine the ground beef, egg, bread crumbs, onion powder, garlic powder, salt and pepper together. (I hate mixing meat.. I don’t know about you but I just can’t stand using my bare hands to mix meat, I always have to wear gloves!)
Shape into a loaf and place in a 9×13 baking dish. We don’t like a real thick meatloaf which is why we do not use a loaf pan and we smash it out to a pretty good size. Just remember that if you make it thicker than what you see pictured you’ll probably have to add some extra baking time.
For the brown sugar topping mix together ketchup, lemon juice and brown sugar. You can add more or less of any of the ingredients to tailor it more to your taste if you like a sweeter/not so sweet flavor.
Now, once you get all those mixed together like you like it, spread it all over the top of your meatloaf.
And bake for 350 degrees for about 1 hour.
One thing I always do is use a leaner meat to avoid the grease factor. Unfortunately this meatloaf looks pretty greasy but that’s because our little shopper (*cough *cough* my husband) picked out the 80/20 beef and also baked this without using a rack which is something else I like to do. With a rack the meat isn’t just sitting in the grease.
