Cranberry Meatloaf Recipe

This recipe has been in my family for years.  It’s one of our favorites, especially during the holidays or to take to pot lucks.  It’s always a hit and has even won an award in our hometown!  If you like cranberries.. you’ll love this recipe! Try it out and let me know what you think.

Things You’ll Need:

  • 1 lb Ground Beef
  • 1 c. Instant Cooked Rice
  • 1/2 c. Tomato Juice
  • 1 Egg, slightly beaten
  • 1/4 c. Minced Onion
  • 1 tbl. Kitchen Banquet
  • 1 1/2 tsp. Salt
  • 1 can Oceanspray Whole Cranberry Sauce
  • 1/2 c. Brown Sugar
  • 1 tbl. Lemon Juice

In a large bowl combine ground beef, cooked rice, tomato juice, egg, minced onion, kitchen banquet, and salt. Place into a 13×9x2 baking dish and shape into a loaf. In a small bowl combine Oceanspray whole cranberry sauce, brown sugar and lemon juice. Spoon over loaf.

Bake at 350 degrees for 40 minutes.
